Usage
A spice for Oriental and Indian dishes: curry blends, dahl, sambar, legume dishes (lentils, chickpeas), vegetable dishes (cauliflower, potatoes, spinach). An ingredient in Ethiopian berbere, Bengali panch poron, Yemeni salatah. Addition to homemade Indian-style bread and naan.
Suggested use
Toast for 30 seconds in a dry frying pan before adding to the dish – the aroma develops through toasting, and the bitterness is softened. Typical serving: 1/2 - 1 teaspoon per 4 servings of the dish. Pairs well with cumin, coriander, turmeric, ginger, garlic and onion. Use sparingly – intense aroma.
