Usage
Baking sugar with an intense molasses flavour – particularly chocolate bakes: brownies, muffins, sponge cake, sticky toffee pudding. A classic ingredient in homemade gingerbread, oatmeal biscuits and fruit cakes. It also works well in marinades for barbecued meats (BBQ), dark game sauces, and glazes for hams and roasts. Vegan.
Directions
Use as a 1:1 substitute for white sugar in recipes. The intense molasses flavour comes into its own in chocolate and gingerbread bakes – where depth of flavour matters. For BBQ marinades: mix 2 tablespoons of sugar with soy sauce, garlic, ginger and a dash of olive oil. In game sauces: add a teaspoon whilst braising – it will balance the acidity of the wine.
Storage
Store in an airtight container in a cool, dark place. Protect from moisture – if the sugar hardens, you can crumble it with a fork or wrap it briefly in a damp tea towel.
